A Waffle, All Stacked Up, and a Swap

This morning Tim and I rode our bikes up to Flavorspot for vegan waffles wrapped around a vegan sausage with maple syrup. This was our first time visiting Flavorspot and definitely not our last. The waffles were huge, and the fillings delicious. It was a cold morning and the hot waffle kept me warm, and left me contemplating a second (which I decided against because riding my bike with a tummy upset is a bad idea). Here is a photo of Tim enjoying his brekkie:

There are lots of other filling options, but they aren’t all listed on the menu and we are afraid to ask about them because we are socially inept losers… Cool losers.

We also took time in the afternoon to make a big batch of homemade pitas. I love how methodical the whole process is; it’s almost hypnotic. I have posted about pitas before, with a lot more photos, here. Usually when we make pitas, we freeze individual balls of unbaked dough. This time, we baked all of the pita dough, and froze about half of them (the recipe we use makes about 16). Below is a photo all of the baked pitas cooperating nicely and forming a lovely stack.

Onto other stuff: I recently did a package swap with a fellow blogger, and my package arrived in the mail a few days ago! Yay for mail with fun vegan treats inside! Here are just a few of the package contents:

Spiced Autumn Granola sweetened with agave and loaded with dried cranberries, cherries, nuts and spices. I have been snacking on this and loving every bite!

Organic candied lemon peel… This is so addictive! I am trying to decide what sort of baked treat to use this in… Muffins? Quick breads? Toppings on a lemony cupcake?!!!!

Sweet Potato Butter. To be honest, I had never heard of sweet potato butter before. I cannot wait to stir this gorgeous spread into oatmeal or slather it on toast.

A cute little purse (she made it herself!!!)! I am so fashion-deprived; this purse will help with that. I love the wooden red beads. They actually remind me of this necklace my older sister used to wear way back in the day (heh heh) that was basically a string of big, wooden, red beads. Ahhh… memories from childhood…

Earrings (also homemade). Pretty, aren’t they?

A vintage knitted necklace… I need to learn how to knit fun stuff like jewelery.

My package also included some art prints, a huge cozy scarf, a cute pink piggie keychain, music, and a lovely note. Package swaps are a ton of fun!

Oh! And because there is a “What’s in Your Freezer?” stint going around, here is the inside of my freezer:

Frozen veggies to make stock with, lots of nuts, tortillas, homemade pita breads, edamame, corn, peas, berries from summer picking (raspberries, blueberries, strawberries), zucchini muffins, whole grain flours, flax seeds and meal, homemade bread, tofu, tomato paste, pesto, breadcrumbs, frosting, and a free container of soy ice cream! Phew!

On the door:

Pretty boring: homemade peach jam I was too lazy to can, tomato sauce, veggie stock, lemon zest (thanks for the idea, Kimmy Kokonut!), and hazelnuts.

I took a photo of the inside of my fridge too, but it’s so empty…

Next post: the Edamame Spread I mentioned awhile back and recipes for Tim’s vanilla and also chocolate kettle corn!!!
