My Newest Addiction
To create some serious suspense, the photo of my newest addiction will appear at the end of this post…
What follows is simply a photo journal of foods I have been making, eating, and enjoying. Tim returned from France last week and with him, he brought… my camera! Hooray! Also included are some photos of presents from abroad. Let’s begin with those:
Incredibly dark, rich, yummy chocolate. I envision melting this down and adding it to a cake or some brownies…
Insanely addictive chocolate and vanilla soy puddings. These are perfect on their own, but even better with a swirl of raspberry jam or chocolate sauce (or both!). The containers are very bizarre and I broke the contraption under the lid of the chocolate one, resulting in me having to jam my finger into the opening. Who cares though, when pudding is the reward?!
Corsica is known for olives, and olives make olive oil. I am pretty excited about trying out this dented container of extra virgin olive oil.
I also received some squares of tofu that don’t need to be refrigerated; I think they will be perfect for backpacking trips, and perhaps a future post! Oh, Tim brought back a fun lawn bowling type game that we played a bunch over the past weekend. I kept winning, which does wonders for my confidence. Once I photograph the game in action, I will post about that too.
Onto food we have been making, eating, and enjoying:
Nearly local noodle bowl: local carrots, bok choy, broccoli, and cauliflower all steamed with tofu, soba noodles, and tahini sauce (sauce recipe based on one from Skinny Bitch in the Kitch). The bowl is topped with toasted pine nuts. This meal is a favorite for Tim and I; it is versatile and delicious.
Homemade apple-pear butter from local organic apples and pears. I have been eating this with a spoon. It is a nice addition to pancakes, muffins, and vanilla ice cream.
Tim’s welcome home (finally!!!) dinner: Walnut-Beet burgers (recipe from The Garden of Vegan) on homemade buns, roasted potatoes, and green beans. We topped the burgers with an agave-dijon sauce and some lettuce. Another favorite meal of ours; these burgers are great because the recipe makes around ten patties and they freeze well (as do the buns!).
And finally, my latest sweet addiction:
Chewy Chocolate Raspberry Cookies from the one and only Veganomicon, with the addition of vegan white chocolate chips. These cookies make bad days go away and tummies happy, I love them. You will too. The recipe calls for raspberry jam and we used an organic raspberry jam that Tim’s mom made (she used raspberries from her own garden, and sweetened it with currant juice – it’s so so so good). Sadly, all the fruit jams we made from the summer berries we picked are gone. Somebody I know likes PB&Js – a lot.

That noodle bowl looks amazing! And you can never really go wrong with the combo of chocolate and rasberry…awesome photos. That olive oil looks really intriguing too!
what awesome treats from abroad! the pudding, especially. yes. and those cookies! with white chocolate chips! none of those to be found in wv, haha… you should try out that apple pear butter in some oatmeal. i did that with some pumpkin butter and it was the best thing in the world. also, hey, were you serious about sending my isolated in the mountains of wv butt some tings? because i would totally be willing to make you some muffins and/or cookies for that. there’s probably nothing here that you can’t get in portland, so a baked good would be way better, yes?
