Food I Ate

Urggg… It’s too hot! I don’t like it when the temperature creeps past 100 degrees. I feel like laying flat on my back under a ceiling fan until doom strikes. Food helps a bit. Here are some tasty eats that kept my belly happy and full.

Greek-Style Lentil Burgers with Tzatziki Sauce (recipe from the July/August 2007 issue of Vegetarian Times) – This is a lentil-veggie-kalamata olive-chickpea-spice burger with a tasty sauce, stuffed into homemade pitas with baby spinach. Really delicious. We ate these while watching the Twilight Criterium, a super cool bike race that happened here in Portland not long ago. These guys are amazingly talented and they just happen to have sexy legs. Here are some snaps from the race:

Nearly Raw Tahini Noodles (recipe from VeganYumYum) – The perfect meal for those hot evenings when you can barely move your butt from one room to the next.

Whole wheat tortillas with homemade hummus, shredded carrot, cucumber, and homemade roasted garlic tofu (the food is in the background, I promise!). Easy. Fast. Filling. This little wooden dude brings good luck. I hope he makes me a rootbeer float tonight…

  4. We’ve been experiencing the opposite here – we’ve had well below normal temperatures here and our garden plants don’t seem to know what to do. That combined with too much rain and squash bugs and we’ve just been having issues.

    I love that little guy that gives good luck. How cute!

    And as always, the food looks fantastic. If you are ever in Missouri and would like to come make some of this delish food for me, I wouldn’t complain…. ;-)

  6. Today is the first day in about 50 straight it has NOT been 100 degrees, so I actually have some energy for a change. Ice cream and salads are definitely the foods of summer!

  13. The lentil burgers look great! I used to get VT but I let my subscription expire. I just bought ED&BV so I think I have enough new recipes to keep me busy. I love the tahini noodle recipe. It’s fun!

  15. I was never a fan of floats as a kid…it was just soda getting in the way of my ice cream. But I think I might like them now. I’ll have to try them with soy cream. Thanks for the reminder. I’d forgotten floats exist. Love the little wooden dude!

  19. I could kiss, genius. I’ve been complaining for weeks about how much I love lentil ‘burgers’ but I’m annoyed that they fall out of my bun and onto my lap. I tried to “wrap” them – but my wrap started to come apart and created an even bigger mess then when I tried to eat them in a bun. PITA! you genius!

    p.s. I hate “heating up” my kitchen in summer too… we live on fruit and salads all summer…
